Jenn’s Mock Crepes

Jenn Lownik sent us this recipe. It sounds delicious and I had to post it right away. I’m going to try this with Elisabeth.

I thought of ‘Kids and a Cook’ this morning and wanted to share this! I made “mock crepes”. This is Ava’s new favorite breakfast. Feel free to use the recipe if you like.

  • 1 “Joseph’s brand high protein omega 3 tortilla wrap
    (these are super soft and don’t have a bunch of junk in them)
  • Any nut butter (we used peanut)
  • 1 sliced banana
  • unsweetened coconut flakes
  • 6-8 chocolate chips
  • powdered sugar
  • butter

Spread layer of nut butter on tortilla. Top with banana slices, coconut and chips. Melt butter in skillet and cook heat tortilla (topping side up). Fold in 1/2 quesadilla style and flip. Heat through, cut into wedges and sprinkle with a little powdered sugar. It was soooo good and a quick hot breakfast loaded with protein for a school day.
