Super Hero Muffins

- Preheat Oven to 350.
- Combine all Dry ingredients in a large bowl.
- Add Carrots, Apples, and Chocolate Chips to dry ingredients, toss lightly, coating the carrots, apples and chips.
- Combine in a small bowl, Milk, Eggs, and Vanilla, Whisk to Combine.
- Add Liquid ingredients to dry, and mix till just moist. DO NOT OVER MIX.
- Using a muffin scoop, fill your muffin tins ½ full.
- Bake for 15-20 minutes.
*These can be made up ahead of time and freeze really well. I like to go little heavy on the Chocolate Chips. A mix of dark and semi sweet chips is preferable for taste and because of anti-oxident properties in dark chocolate.
*Also, Yellow Raisins can be substituted for the Chocolate Chips if sugar content is an issue. If you soak the raisins over night they will not be as firm and more palatable to children.
