Gluten Free Cookies

Being gluten free is tough as an adult, and even tougher as a child. The hardest part of being gluten free is missing out on all the baked goodies, like cakes and cookies. Yes, you can make these items at home completely gluten free, but when your kid(s) go over to a friends house, the issues begin. I have two very easy recipes for gluten free cookies. So easy your kids can make them, you can bake them, and they can share them with their friends. In Fact these cookies are so good –those who are not gluten free can enjoy them and make them as well.

Peanut Butter Cookies
1 eggs
1 1/3 Cup Chunky Peanut Butter
1/4 Cup Sugar
1 to 2 cups Mini Chocolate chips (optional)

Preheat your oven to 350 degrees
Mix all ingredients together, and using a spoon dollop onto a cookie sheet lined with parchment paper or a Sil pat. use the back of the spoon to press the cookies down a bit, then bake int the oven for 10 to 12 minutes.

If you or your child are not a fan of peanut butter, or are allergic to it, try this recipe out.

Spotted Meringue Cookies:

nonstick baking spray
5 Egg whites
1/4 Tsp salt
1/2 tsp Cream of Tartar
2/3 Cup sugar
1 Tbsp Gluten free Vanilla
2 cup Gluten free Mini Chocolate Chips

Preheat your oven to 200 degrees,
Using an electric hand beater, or stand mixer, whip egg whites until they become foamy. Add salt and Tartar, beat until stiff.
Add the sugar gradually, and then the Vanilla.
Using a wooden or silicone spoon gently fold in the chocolate chips
On a parchment lined or Silpat lined cookie sheet, drop a small amount of meringue onto the cookie sheet, place in the oven, and leave the cookies in the oven for 2 HOURS. They should still be bright white, with a hard exterior and a soft interior.
Remove and enjoy, the Meringue should be hard on the outside, but soft on the inside. If not eating right away place in an airtight container to preserve.
