Quick & Portable Kids Lunch: Tortilla & Egg Sandwiches

This is such an easy concept it shouldn’t be called a recipe. However, parents are always asking me what is the best way to get their kids to eat a healthy lunch. They need something that is quick to make, and will provide children with energy and nutrients through out the day. It’s a fact that protein rich foods will propel children through their busy recess and studying in the afternoon. The problem is time, ingredients, and keeping kids interested in what’s in the lunch bag.

I like this idea whether its for the school day, a family outing or snacks at the game.

Hard boiled eggs actually travel well. In a lunch bag cooler they will stay fresh all morning. You can boil up a dozen eggs in a matter of minutes. Prepping the sandwiches is really quick too. Take a tortilla, regular, corn or whole wheat, whatever your kids prefer and place slices of one egg in the center. Toss on a little green pepper sauce and fold the tortilla over like a wrapper. Put in a container or wax paper wrap and then in the lunch bag with some fruit and maybe a treat. That’s it. The green pepper sauce adds a great kick without too much heat and actually helps make the glossy hard boiled egg white’s consistency more palatable for children. Do not feel bound by these few ingredients, have your kids add whatever they like.
