Kids and a Cook Present: Spicy Cheesy Chicken Fingers

you just have to forget the vegetables and GO FOR the  spicy and cheesy chicken wings! These Chicken fingers are so good, boneless and relatively low cal and low fat.  Since we are using ‘tenders’ –and not wings– you serve only white meat without fat.

You and your kids will have fun together making them, which is the whole point. I have revised the recipe even more after we shot this video, so you will see a couple of different things within the recipe that are not spoken about on the video. You can really make this recipe your own and to your kids taste. The whole point here is to find things your kids like to eat, make nutritional improvements, get into the kitchen and cook with your kids, we are not inventing the wheel here!  These recipes are quick and simple, our mission is to give you ideas  so you can spend quality time with your kids, while creating delicious and healthy meals.

Recipe:

Ingredients:· 1 ½ Lbs. Chicken Tenders (or sliced chicken breasts)

· ½ Cup Red Hot Sauce or Your Favorite BBQ sauce

· 4 Tbsp. Olive Oil

· ½ Cup Dijon Mustard

· 3-4 Tbsp. Honey

· 1 ¼ Cup Parmesan Cheese (grated)

· ¾ Cup Bread Crumbs (Italian Style seasoned)

Ingredients: For Cool Blue Cheese Dressing

· 1 Container of Greek Yogurt (8 oz)8 oz Blue Cheese, Crumbled

· ¼ Cup Buttermilk

· ¼ Cup Fresh Parsley, Minced

Worcestershire sauce, to taste

· Salt and Pepper to taste (use Kosher Salt and fresh ground pepper)

Procedure

1    Preheat your oven to 450 F Degrees.

2    In a large bowl, combine the hot sauce and olive oil with the mustard and honey. Stir.  Add the chicken tenders and stir to coat evenly.  Let stand for a least 30 minutes. or Make the night before and let marinate overnight.

3    Get a pie dish or casserole and stir together the Parmesan cheese and the breadcrumbs.  Take each chicken tender and dip in the breadcrumb mixture. Coat them completely and press to make sure the crumbs adhere well.

4    Transfer each piece to a cookie sheet lined with a Sil Pat or parchment paper. If you have neither, grease the sheet well with a light cooking oil. Arrange evenly on the sheet, leaving some room between each chicken tender. For an even crispier crust use a cookie cooling rack, placed on top on your cookie sheet. Lightly spray or oil the rack  and place the chicken fingers on the rack. Allow them to sit on the rack for 15 minutes before putting them in the oven. This allows the coating to adhere better to the chicken.  The rack allows the heat to circulate around the chicken creating a convection- like current.

5    Bake for 12 – 15 minutes or until golden brown. (Time will depend on the size of the tenders).

6    For the Blue Cheese Dressing: Stir the yogurt, Blue Cheese, Parsley, Worcestershire Sauce, Salt and Pepper and mix.  Slowly add the buttermilk, stirring as go you. You do not want to loosen the mixture too much, — so you may not need the entire amount. Cover and refrigerate until ready to eat.
