Gluten Free Extra Crunchy Chicken Fingers

These will sure to delight evan those who are not Gluten Free. The addition of pretzels really makes the difference in the taste and crunch.

Ingredients:

2 cups Gluten Free cornflake cereal

1 cup Gluten Free Pretzels

1/4 teaspoon garlic powder

1/4 teaspoon paprika (sweet or hot which ever your family prefers)

1/2 cup Gluten Free All Purpose flour mix, of your liking

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

2 eggs lightly beaten, you may also use an egg substitute if dairy free

1 pound chicken tenders

nonstick cooking spreay

your favorite barbeque sauce and or honey mustard, to dip

Directions:

  • preheat oven to 350 degrees
  • in a food processor combine the cornflakes, pretzels, garlic powder, and paprika- transfer to a plate, set aside.
  • put onto a second plate, the Gluten Free flour mixture, salt, and pepper-mix with a fork, set aside.
  • lightly beat the eggs in a shallow bowl, set aside
  • salt and pepper both sides of the chicken fingers, then dredge each one in the flour mixture. Next drege each chicken finger into the egg mixture, and finally coat in the cornflake/pretzel mixture
  • spray a cookie sheet with cooking spray, or if you have a cookie cooling rack that fits inside your cookie sheet, use that spray it and lay each finger onto it- this will prevent a soggy bottom to your chicken fingers, but if you do not have a rack no worries, lay the fingers directly on the sprayed cookie sheet and bake.
  • bake for 10-15 minutes- this will vary depending on the thickness of the chicken fingers you are useing, so check after 10 minutes and keep cooking 5 minutes more until chicken is golden and tender.

After 15 years in the culinary industry, Michelle’s love of cooking, baking and children, has lead to her to her newest career, offering personalized family cooking classes and creating a TV show, digital broadcasts and Cook Books like no other. Kids and a Cook is all about healthy, fun, and easy meals for kids and their families. Michelle credits her parents with her success and her love of food, helping to create so many memories being in the kitchen with them as a child.
