Fruit Jell-O Surprise

  • 13oz Package of Your favorite Flavor Jell-O, Mine is Mixed Berry
  • 31oz packages of unflavored Gelatin
  • 2 Cups Fruit Juice, Flavor should be close to that of Jell-O
  • 2 Cups Cold Water
  • 1 large Apple or 2 medium ones, ¼” sliced
  1. In a large bowl or 4 cup measuring glass, combine the Jell-O and Gelatin, whisk to combine.
  2. In a small sauce pan bring to a boil 2 cups fruit juice.
  3. Add the hot fruit juice to the Jell-O mixture, and stir with a silicone spoon until Jell-O and gelatin are completely dissolved.
  4. Add 2 cups cold water, mix to combine.
  5. Using a 9 x 13 glass baker, pour ½ the Jell-O liquid into the baker and refrigerate for 25-30 minutes.
  6. Meanwhile slice the apple(s) and using a cookie cutter about 1 to 1.5″ in diameter cut out 6 centers of apple. (No needs to peel apple(s) as you are using the center of each slice.
  7. Pull Jell-O out of refrigerator and place apple slices evenly apart on top of first layer, then pour remaining liquid Jell-O over them.
  8. NOTE: Apple slices may float to top that is fine, and as you put the baker back into the refrigerator they may move around, just settle them into the fridge, and move them with your finger back into place.
  9. Allow Jell-O to fully set about an hour or so, then remove from the fridge, and using a bigger cookie cutter 2-2.5″ cut out fruit and Jell-O.

TIP: I use an offset spatula to remove the excess Jell-O away from the cookie cutter, and then slide the spatula underneath the cookie cutter and Jell-O to lift out.

NOTE: Save the excess Jell-O for snacks later with some cool whip.

NOTE: These can be made ahead and stored in a plastic container with wax paper in between each Jell-O cut out.

After 15 years in the culinary industry, Michelle’s love of cooking, baking and children, has lead to her to her newest career, offering personalized family cooking classes and creating a TV show, digital broadcasts and Cook Books like no other. Kids and a Cook is all about healthy, fun, and easy meals for kids and their families. Michelle credits her parents with her success and her love of food, helping to create so many memories being in the kitchen with them as a child. Her goal is to have a show to help viewers create the same memories with their families. A show for the kids, and by the kids, with the “cook” there as guidance. Michelle’s featured co-host is an energetic, precocious 9-year-old named Elisabeth.
